Foodie Friday: Superseed Energy Ball Recipe
Naturally sweetened with dates and full of nutritious natural ingredients, this Superseed Energy Balls recipe makes bite-sized energy balls are the perfect healthy vegan snack to help get you through the afternoon slump! Recipe re-posted with permission from our friends at Manitoba Harvest.
- 1 1/2 cups medjool dates, pitted
- 1/4 cup cacao nibs
- 1/4 cup hemp hearts
- 1/4 cup ground flax
- 1/4 cup chia seeds
- 1/2 cup unsweetened shredded coconut plus extra for rolling the balls in
- 2 tbsp coconut oil
- 1 tbsp cacao or cocoa powder
Place all the ingredients into a food processor and blend until it forms a smooth dough. If the dough is not sticky enough you can add a few more dates and blend again. Use a tablespoon to scoop out the mixture and then roll it into a ball. Repeat until all the dough is gone. Roll the balls in the unsweetened shredded coconut and store in a container in the fridge.
